
Chicken Enchiladas
Description
Chicken Enchiladas are a hearty Mexican favorite. Rolled tortillas are filled with seasoned chicken and cheese, then topped with rich enchilada sauce and baked until bubbly. It’s comfort food with a spicy kick.

- Mixing bowls
- Tongs
- Knife and cutting board

Ingredients
- 8 Corn tortillas
- 2 cups Cooked shredded chicken
- 1 cup Enchilada sauce
- 1 cup Shredded cheddar cheese
- 1/2 cup Shredded Monterey Jack cheese
- 1 Onion (chopped)
- 2 tbsp Oil
- 1 tbsp Ground cumin
- 1 tbsp Chili powder
- 1/2 tbsp Garlic powder
- to taste Salt and pepper
- Optional Sour cream, cilantro, lime wedges
Instructions
- Preheat oven to 180°C (350°F).
- In a pan, heat oil and sauté chopped onion until soft. Add shredded chicken, cumin, chili powder, garlic powder, salt, and pepper. Mix well and cook for 2–3 minutes.
- Lightly warm tortillas. Fill each with the chicken mixture and some shredded cheese. Roll and place seam-side down in a greased baking dish.
- Pour enchilada sauce over the rolled tortillas. Top with remaining cheese.
- Bake for 20–25 minutes until the cheese is melted and bubbly.
- Garnish with sour cream, chopped cilantro, and lime wedges.
