Description

Chicken Enchiladas are a hearty Mexican favorite. Rolled tortillas are filled with seasoned chicken and cheese, then topped with rich enchilada sauce and baked until bubbly. It’s comfort food with a spicy kick.

Equipment

  • Baking dish
  • Frying pan
  • Mixing bowls
  • Tongs
  • Knife and cutting board
  • Oven

Ingredients

  • 8 Corn tortillas
  • 2 cups Cooked shredded chicken
  • 1 cup Enchilada sauce
  • 1 cup Shredded cheddar cheese
  • 1/2 cup Shredded Monterey Jack cheese
  • 1 Onion (chopped)
  • 2 tbsp Oil
  • 1 tbsp Ground cumin
  • 1 tbsp Chili powder
  • 1/2 tbsp Garlic powder
  • to taste Salt and pepper
  • Optional Sour cream, cilantro, lime wedges

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a pan, heat oil and sauté chopped onion until soft. Add shredded chicken, cumin, chili powder, garlic powder, salt, and pepper. Mix well and cook for 2–3 minutes.
  3. Lightly warm tortillas. Fill each with the chicken mixture and some shredded cheese. Roll and place seam-side down in a greased baking dish.
  4. Pour enchilada sauce over the rolled tortillas. Top with remaining cheese.
  5. Bake for 20–25 minutes until the cheese is melted and bubbly.
  6. Garnish with sour cream, chopped cilantro, and lime wedges.
