Description

Chicken Shawarma is a popular Middle Eastern street food made with spiced marinated chicken, grilled and wrapped in flatbread with fresh vegetables and garlic sauce. It’s smoky, juicy, and packed with flavor in every bite.

Equipment

  • Mixing bowls
  • Frying pan or grill pan
  • Knife and cutting board
  • Tongs
  • Foil or parchment paper (for wrapping)

Ingredients

  • 500 g Chicken thighs (boneless, skinless)
  • 2 tbsp Plain yogurt
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 3 cloves Garlic (minced)
  • 1 tbsp Ground cumin
  • 1 tbsp Ground coriander
  • 1 tsp Ground paprika
  • 1/2 tsp Ground turmeric
  • 1/2 tsp Ground cinnamon
  • 1/2 tsp Salt
  • to taste Black pepper
  • 4 Flatbreads or pita breads
  • 1 cup Chopped lettuce
  • 1 Tomato (sliced)
  • 1/2 Red onion (thinly sliced)
  • Optional Pickles, parsley, chili sauce

Instructions

  1. Mix yogurt, olive oil, lemon juice, garlic, and all the spices. Add chicken and coat well. Marinate for at least 30 minutes (or up to overnight in the fridge).
  2. Heat a grill pan or skillet over medium-high heat. Cook chicken for 6–8 minutes per side or until fully cooked and slightly charred. Let rest, then slice.
  3. In a bowl, whisk together mayo, garlic, lemon juice, olive oil, and salt until smooth.
  4. Spread garlic sauce on each flatbread. Add sliced chicken, lettuce, tomato, onion, and any optional toppings.
  5. Roll up tightly in foil or parchment. Serve warm.
