
Classic Spaghetti Carbonara
Description
Spaghetti Carbonara is a Roman classic made with just a few simple ingredients—pasta, eggs, Pecorino Romano cheese, pancetta, and black pepper—but it delivers rich, creamy, savory comfort in every bite.
Equipment
- Large pot
- Skillet or frying pan
- Mixing bowl
- Whisk or fork
- Tongs or pasta fork
- Cheese grater
Ingredients
- 400 g Spaghetti
- 150 g Pancetta (or guanciale), diced
- 2 Large eggs
- 2 Egg yolks
- 80 g Pecorino Romano cheese, grated
- 1 tbsp Freshly ground black pepper
- to taste Salt
Instructions
- Boil spaghetti in salted water until al dente. Reserve 1 cup of pasta water before draining.
- In a bowl, whisk together eggs, yolks, grated Pecorino Romano, and black pepper. Set aside.
- In a skillet, cook pancetta over medium heat until crispy. Remove from heat.
- Add drained spaghetti to the skillet with pancetta. Toss to coat in the rendered fat. Let cool slightly (to prevent scrambling the eggs).
- Quickly pour the egg-cheese mixture over the pasta, tossing continuously. Add reserved pasta water a little at a time until creamy.
- Plate immediately, garnish with extra cheese and black pepper.
