Description

Spaghetti Carbonara is a Roman classic made with just a few simple ingredients—pasta, eggs, Pecorino Romano cheese, pancetta, and black pepper—but it delivers rich, creamy, savory comfort in every bite.

Equipment

  • Large pot
  • Skillet or frying pan
  • Mixing bowl
  • Whisk or fork
  • Tongs or pasta fork
  • Cheese grater

Ingredients

  • 400 g Spaghetti
  • 150 g Pancetta (or guanciale), diced
  • 2 Large eggs
  • 2 Egg yolks
  • 80 g Pecorino Romano cheese, grated
  • 1 tbsp Freshly ground black pepper
  • to taste Salt

Instructions

  1. Boil spaghetti in salted water until al dente. Reserve 1 cup of pasta water before draining.
  2. In a bowl, whisk together eggs, yolks, grated Pecorino Romano, and black pepper. Set aside.
  3. In a skillet, cook pancetta over medium heat until crispy. Remove from heat.
  4. Add drained spaghetti to the skillet with pancetta. Toss to coat in the rendered fat. Let cool slightly (to prevent scrambling the eggs).
  5. Quickly pour the egg-cheese mixture over the pasta, tossing continuously. Add reserved pasta water a little at a time until creamy.
  6. Plate immediately, garnish with extra cheese and black pepper.
