These pancakes are packed with protein and natural sweetness from bananas and peanut butter, perfect for a fitness-friendly breakfast or post-workout treat that satisfies your sweet tooth without guilt.

Equipment

  • Mixing bowl
  • Spatula
  • Non-stick frying pan or griddle
  • Measuring cups and spoons
  • Fork or whisk

Ingredients

  • 1 Ripe banana (mashed)
  • 2 large Egg whites
  • 50 g Oats (rolled or quick)
  • 30 g Vanilla or unflavored whey protein powder
  • 1 tbsp Peanut butter (natural)
  • 1 tbsp Baking powder
  • 1/2 tbsp Cinnamon
  • Pinch Salt
  • Sugar-free syrup or fresh berries for topping

Instructions

  1. In a bowl, mash the banana well. Add egg whites and peanut butter. Mix with a spatula until combined.
  2. Stir in oats, protein powder, baking powder, cinnamon, and salt until a batter forms. Let sit for 2 minutes to thicken.
  3. Heat a non-stick pan over medium heat. Lightly grease if needed. Pour batter (about 1/4 cup) per pancake. Cook 2-3 minutes until bubbles form on the surface, then flip and cook another 1-2 minutes.
  4. Stack pancakes, top with fresh berries or a drizzle of sugar-free syrup.
