
Protein Peanut Butter Banana Pancakes

- Spatula
- Non-stick frying pan or griddle

Ingredients
- 1 Ripe banana (mashed)
- 2 large Egg whites
- 50 g Oats (rolled or quick)
- 30 g Vanilla or unflavored whey protein powder
- 1 tbsp Peanut butter (natural)
- 1 tbsp Baking powder
- 1/2 tbsp Cinnamon
- Pinch Salt
- Sugar-free syrup or fresh berries for topping
Instructions
- In a bowl, mash the banana well. Add egg whites and peanut butter. Mix with a spatula until combined.
- Stir in oats, protein powder, baking powder, cinnamon, and salt until a batter forms. Let sit for 2 minutes to thicken.
- Heat a non-stick pan over medium heat. Lightly grease if needed. Pour batter (about 1/4 cup) per pancake. Cook 2-3 minutes until bubbles form on the surface, then flip and cook another 1-2 minutes.
- Stack pancakes, top with fresh berries or a drizzle of sugar-free syrup.
